    Colchester rock Oysters declination / Natural Oyster scented Shallots and red wine puree / oyster gratin with crème fraiche and parmesan / deep fried oyster coated in Panko crumb with a chili and lemon mayonnaise

    Duck foie gras marinated in Williams Pear Liqueur / hazelnuts brioche / conference pear icing / pear and sweet spice gel / hazelnut powder

    Second Starter
    Smoked eel pannacota topped with caviar / carrot puree / Pomme soufflé / carrot and orange foam

    Fish Main
    Steamed turbot fillet / red and yellow beetroot scales / beetroot and vanilla chutney / dill sabayon / beetroot ketchup / yellow beetroot gel

    Meat course
    Venison saddle with a black truffle and venison stuffing / venison jus / cauliflower texture

    Crispy, filo pastry cannelloni filled with Roquefort Chantilly / vibrato 70% dark chocolate crèmeux / rocket leaves / candied walnuts
