Born in Vichy within the Auvergne region of France, Maxime has grown up immersed in the hospitality industry. “My parents had a restaurant inside the family house called ‘La Vie en Rose’, so I grew up in the hospitality atmosphere, maybe that’s the reason why I really love my job”, says Maxime.
Maxime’s career began in the French Riviera, after moving there at the age of seven. After kick-starting his career in a one-star Michelin gastronomique restaurant, Les Terraillers, Maxime went on to experience working in a range of diverse dining establishments, including a brasserie, pubs and bars, and a Crêperie Bretonne. Not only is Maxime keen to venture to new establishments, but he also enjoys the prospect of travel; spending a winter season skiing or a summer on a private beach.
After spending more than two years in the beautiful city of Paris, working at ‘Au Pere Tranquille’, an old institution once owned by the 1st arrondissement, Maxime decided to go back to his beginnings. “It was a very rich experience for me, but now I want to come back to my roots”, says Maxime, “and work again in a gastronomique restaurant, where every day is a challenge of perfection”.
This is Maxime’s first visit to the UK, following his good friend, our head pastry chef, Mathieu, into a role where they will be working together to ensure our guests receive a dining experience like no other. “I’m really excited to start this new adventure at The Great House, and in England too, because it’s my first time here!”, says Maxime.
